Métabolisme et adaptation : l’objectivation des phénomènes physiologiques et sensoriels nutritifs en psychiatrie (fin xixe-début xxe siècle)

Abstract

À la croisée d’une sociologie des sciences et des techniques et d’une anthropologie du vivant, cet article explore la manière dont les pratiques de mesure des phénomènes physiologiques et sensoriels nutritifs s’appuient sur une appréciation métrique énergétique et temporelle de l’humain et de son évolution. L’article analyse dans un premier temps les pratiques de mesure de l’activité nutritionnelle des hystériques réalisées à la fin du xixe siècle par les psychiatres Constantin Empereur et Georges Gilles de La Tourette. Dans un second temps, il revient sur les travaux des neurologues et psycho-physiologistes Joanny Roux et Georges Noguès portant sur la sensation de faim et sa disparition pathologique. L’article suggère que si la psychiatrie neurologique évite une approche strictement mécanique du métabolisme, les études psycho-physiologiques de la sensation de faim renforcent une lecture dynamique et adaptative de la nutrition humaine tirée d’une vision spencérienne de l’évolution.
