Abstract

Notre texte propose de partir de l’analyse de l’activité d’un formateur dans le cadre d’un dispositif de formation professionnelle initiale préparant à un brevet de technicien supérieur en industries agroalimentaires. Il a pour objectif de montrer quel est, pour lui, le contenu à faire apprendre et comment il s’y prend pour le mettre à disposition des apprenants. Nous comparons deux séances de formation se déroulant dans l’exploitation technologique de transformation agroalimentaire d’un lycée. L’analyse montre que les caractéristiques des situations dans l’exploitation technologique (but de production, caractéristiques des tâches…) imposent certaines manières d’agir au formateur. Elles introduisent aussi des dimensions des situations de la fabrication alimentaire qui sont à « apprendre » (complexité de la situation, contrainte de temps…). Les médiations déployées par le formateur visent l’assimilation des actions par les étudiants et l’élaboration de leur base d’orientation pour l’action en situation professionnelle et donnent à voir la place qu’y tiennent les connaissances technologiques et scientifiques.
