Pan de molde elaborado com suero de leche de cabra

Abstract

El trabajo tuvo como objetivo evaluar la aceptación sensorial y determinar la vida útil del pan de molde con suero de leche de cabra. La evaluación de los panes fue realizada con 92 panelistas, utilizando la escala hedónica de 7 puntos. La vida útil fue evaluada por análisis microbiológicos y test sensorial luego de 1, 4, 6 y 7 días de almacenamiento. Los promedios atribuidos a los panes con y sin adición de suero fueron: 5,89 e 5,83, respectivamente. Estos resultados indicaron la buena aceptación de los panes. La vida útil del pan de molde fue de 6 días. A pesar de observar una reducción en los promedios atribuidos por los panelistas a lo largo del período de almacenaje, no interfiriendo en la aceptación de los panes.
