Abstract

A kombucha é uma bebida fermentada obtida a partir de chá verde ou preto, sacarose e cultura simbiótica de bactérias e leveduras (SCOBY). Seus benefícios incluem atividade antioxidante e antimicrobiana. Durante a produção de kombucha ocorre simbiose entre bactérias e leveduras e ao final, além da bebida, ocorre a formação de um biofilme gelatinoso na superfície, composto principalmente por celulose bacteriana. A composição microbiana do SCOBY varia, incluindo bactérias acéticas e leveduras. A celulose bacteriana possui vantagens sobre a celulose de plantas, como maior densidade, resistência mecânica e capacidade de retenção de água. Após a purificação, a celulose de SCOBY pode ser uma valiosa matéria-prima em várias aplicações, sendo a kombucha uma potencial fonte de produção. A celulose de SCOBY, derivada do kombucha, pode passar de resíduo sem valor agregado para uma fonte promissora de novos materiais. Este trabalho teve como objetivo realizar uma revisão bibliográfica sobre a produção de kombucha com diferentes substratos, a obtenção da celulose de SCOBY e as potenciais aplicações em alimentos.
