PENGARUH EMULGATOR TERHADAP STABILITAS FISIK KRIM EKSTRAK CHIA SEED (Salvia hispanica L)

Abstract

Chia Seed (Salvia hispanica L.) memiliki beberapa senyawa dengan aktivitas antioksidan potensial seperti asam klorogenat, asam kafeat, serta flavonoid berupa myricetin, quercetin dan kaemferol. Penelititan ini bertujuan untuk mengetahui pengaruh emulgator terhadap stabilitas krim antioksidan ekstrak etanol chia seed menggunakan emulgator jenis anionik, nonionik dan phytocream®. Metode ekstraksi yang digunakan yaitu metode maserasi dengan pelarut etanol 96%. Kestabilan sediaan krim dilihat dari parameter uji organoleptis, homogenitas, tipe krim, pH, viskositas, daya lekat, daya sebar dan sentrifugasi sebelum dan sesudah penyimpanan dipercepat pada suhu 40°C selama 6 hari. Hasil pengamatan organoleptis terjadi perubahan warna dan bau pada F1 sesudah penyimpanan dan pH krim F1 didapatkan 7,74 tidak dalam rentang pH kulit. Pada pengujian daya lekat F1, F2, F3 menunjukkan penurunan setelah penyimpanan dipercepat yaitu 1,31, 1,28 dan 1,24 detik, sedangkan pengujian daya sebar F1 dan F2 mengalami peningkatan setelah penyimpanan dipercepat yaitu 7,16 dan 7,66. Berdasarkan hasil tersebut, dapat disimpulkan bahwa jenis emulgator dalam formula krim antioksidan ekstrak chia seed berpengaruh terhadap uji organoleptis, pH, daya sebar dan daya lekat. Dari ketiga formula didapatkan formula 3 dengan emulgator phytocream yang lebih stabil
