Abstract

Foram avaliadas características físico-químicas da carne de novilhos Nelore (NEL) e F1 Rubia Gallega x Nelore (RGN), suplementados com cromo picolinato (Cr), utilizando-se de amostras do M. longissimus thoracis, coletadas entre a 12ª e 13ª costelas de 24 animais. O delineamento adotado foi o inteiramente casualizado, em arranjo fatorial 2 x 2. Mensurou-se o pH, espessura de gordura (EG), perdas por cocção (PC) e por exsudação na embalagem (PE), maciez e coloração da carne, bem como os teores de umidade (U), extrato etéreo (EE), matéria mineral (MM) e proteína bruta (PB). Os animais RGN apresentaram carne com pH mais elevado (5,63), menor EG (1,87 mm) e maiores PC (19,08%). A carne dos animais NEL apresentou maior luminosidade e intensidade da coloração vermelha (L*36,70 e a*17,72). Animais suplementados com Cr apresentaram carne com maior percentual de PB (22,14%) e animais RGN apresentaram carne com menor percentual de EE (1,79%) e maior teor de U (73,23%). Assim, a suplementação com Cr influenciou no aumento do percentual de PB da carne e a inserção do genótipo Rubia Gallega reduz o percentual de gordura da mesma, sem, no entanto, afetar outros atributos de qualidade, sendo opção para o mercado cuja carne magra é valorizada.
