Abstract

El procesado de alimentos por alta presión (HPP, High Pressure Processing) es una técnica relativamente nueva en la que los alimentos se someten a una presión muy elevada en el interior de una vasija. El presente trabajo pretende establecer una metodología y un procedimiento industrialmente viable para el diseño de vasijas de elevado diámetro interior (superior a 150mm) mediante la combinación de varias técnicas de introducción de tensiones residuales permitiendo vasijas capaces de resistir un elevadísimo número de ciclos de fatiga. El reto surge en la definición de la metodología para intentar interconectar las diferentes etapas de fabricación, y por tanto de cálculo, ya que al tratarse de una vasija multicapa, con varios procesos de fabricación, alguno de ellos basado en la plastificación del material, son muchos los parámetros que entran en juego por lo que la correcta definición de los parámetros intervinientes es un factor clave.
