Identifikasi Tingkat Kesegaran Daging Ayam Kampung Menggunakan Metode KNN Berdasarkan Warna Daging

Abstract

Ayam kampung merupakan jenis unggas yang masih bersifat alami yang berarti belum mendapatkan perlakuan perbaikan genetik. Sifat-sifat yang menguntungkan dari segi ekonomi yang dimiliki ayam kampung relatif sedikit dibandingkan ayam ras, bahkan dalam produksi telur maupun kemampuan menghasilkan daging. Penentuan tingkat kesegaran daging ayam kampung merupakan salah satu faktor penting untuk menentukan kualitas daging yang akan dikonsumsi, agar masyarakat sebagai konsumen dapat terhindar dari resiko terburuk jika mengonsumsi daging ayam kampung yang tidak segar. Untuk itu dilakukan penelitian untuk menentukan tingkat kesegaran daging ayam kampung dengan menggunakan metode KNN dan HSV. Tingkat kesegaran dibagi menjadi 3 tingkatan yaitu busuk, segar, dan tidak segar. Berdasarkan hasil pengujian yang dilakukan menggunakan metode KNN dengan model k=1, k=3, k=5, k=7, k=9, dan k=11 didapatkan bahwa pada proses pengujian menyatakan nilai dari akurasi tertinggi didapatkan oleh nilai k=5 yaitu sebesar 80% dan k=7 yaitu sebesar 80%, sementara itu hasil terendah didapatkan oleh nilai k=1 yaitu sebesar 80%.
