Abstract

Los alimentos que aportan beneficios al organismo más allá de la nutrición básica son definidos como “alimentos funcionales”, los cuales pueden ser de origen natural, como la naranja que contienen compuestos bioactivos, como la vitamina C y B-criptoxantina precursor de la vitamina A, o procesados, como el yogurt en donde sus compuestos bioactivos son probióticos como los Lactobacillus o Bifidobacterium. Para considerarse alimentos funcionales sedebe demostrar su bioeficiencia y seguridad en humanos, presentarse en forma de alimentos convencionales e incluirse como parte de una dieta equilibrada. En México, no existe una legislación regulatoria vigente que revise a los “alimentos funcionales”, como en Estados Unidos o Japón, por lo que, no se puede asignar esta denominación a productos alimenticios en el mercado nacional. Diversas investigaciones han mostrado que los compuestos bioactivos como los probióticos, prebióticos, polifenoles, ácidos grasos poliinsaturados y fitoesteroles presentes en diferentes alimentos, están asociados con la salud intestinal, efectos antioxidantes, antiinflamatorios, hipolipemiantes, y efectos positivos en la salud cardiovascular. Por lo tanto, la regulación de los alimentos funcionales en México y en el mundo representa un futuro prometedor para retrasar la aparición de muchas enfermedades crónicas, y con ello promover el bienestar de la población.
