Clarificação de óleos vegetais com argilas esmectitas: uma revisão

Abstract

Diversas pesquisas têm sido realizadas com o intuito de obter condições ótimas para o processo de clarificação de óleos vegetais com argilas esmectitas. Esses estudos buscam aumentar o rendimento, diminuir o tempo de operação e os gastos com energia, obtendo produtos de melhor qualidade a menores custos. Assim, o presente trabalho tem como objetivo fornecer a comunidade científica e industrial uma revisão bibliográfica dos principais trabalhos que tratam da clarificação de óleos vegetais para fins comestíveis. O foco principal é mostrar o estado da arte e as principais variáveis investigadas quando se empregam argilas esmectitas como adsorvente. Os resultados obtidos permitem concluir que o máximo de eficiência nesse tipo de processo é obtido quando são utilizados um sistema a vácuo, temperaturas de 100ºC, tempo de 25 min, razão argila/óleo de 0,8% (m/m), tamanho das partículas (<0,074mm) e velocidade de agitação de 800 rpm.
