DESENVOLVIMENTO DE SORVETE DE ABACATE À BASE DE LEITE DE VACA E DE EXTRATO HIDROSSOLÚVEL DE SOJA

Abstract

O sorvete é fonte de proteína, gordura e carboidrato, como a lactose, quando o componente principal é leite de vaca. A soja é um alimento nutritivo ao organismo humano e possui ausência de lactose, sendo assim, matéria-prima alternativa ao leite de vaca em formulações de alimentos para pessoas intolerantes à lactose. Objetivou-se avaliar o desenvolvimento e aceitação do sorvete de abacate à base de leite de vaca e à base de extrato hidrossolúvel de soja. Foram processadas duas formulações de sorvete de abacate, uma à base de leite de vaca (Tratamento 1) e a outra à base de extrato hidrossolúvel de soja (Tratamento 2). Cem provadores não treinados receberam duas amostras codificadas, uma de cada tratamento e avaliaram os atributos sensoriais através do teste de aceitação por meio de Escala Hedônica de 9 pontos e também o teste de intenção de compra dos produtos através do uso de escala de 5 pontos. Os dados obtidos foram submetidos à análise de variância e teste F a 5% de probabilidade. Houve diferença significativa (P<0,05) entre as duas formulações para intenção de compra e de todas as variáveis sensoriais avaliadas, sendo as maiores médias obtidas para o sorvete de abacate à base de leite de vaca. Em relação à intenção de compra 61% dos provadores optaram pelo sorvete de abacate contendo leite de vaca, enquanto 39% pelo sorvete de abacate à base de extrato hidrossolúvel de soja.
