RENDIMENTO DE ABATE DE BOVINOS E BUBALINOS EM CONFINAMENTO

Abstract

Objetivou-se com este estudo avaliar o rendimento de abate de dois grupos genéticos, bovinos Sindi e bubalinos Mediterrâneos abatidos com pesos médios semelhantes. O experimento foi realizado no Campus da UFRuralRJ, onde 14 animais inteiros foram terminados em confinamento (7 bovinos e 7 Bubalinos), recebendo a mesma dieta no período de dezembro de 2004 a abril de 2005. Os animais foram abatidos quando alcançaram peso médio de 488,3±8,94 kg para bovinos Sindi e 492,5±8,61 kg para bubalinos mediterrâneos. O delineamento utilizado foi o inteiramente casualizado. O rendimento de carcaça quente foi superior nos bovinos em relação aos búfalos (55,1% vs 48,3%). As porcentagens da cabeça (4,7 vs 5,5%), patas (2,0 vs 2,4%), couro (8,0 vs 9,3%) e vísceras (29,4 vs 33,6%) foram maiores nos bubalinos, enquanto que os bovinos apresentaram maior peso da rabada (1,3 vs 1,0 kg). Os rendimentos da cabeça (8,0 vs 11,3%), patas (3,6 vs 5,0%), couro (14,6 vs 19,3%) e vísceras (53,5 vs 69,6%) em relação à carcaça foram maiores nos bubalinos. Bovinos Sindi apresentam maior rendimento de carcaça por apresentarem menores percentuais de perdas no abate.
