Explorando novos sabores

Abstract

Plantas aromáticas e o azeite permeiam a história da humanidade. Por apreciar esses alimentos, tenho unido seus sabores por meio do uso de destilador. Os experimentos de saborização de azeites com ervas e plantas mundialmente conhecidas como açafrão, alecrim, chimichurri, ervas de Provence, hortelã, louro, manjericão, orégano, pimenta calabresa, sálvia e tomilho foram satisfatórias. Testei, ainda, uma planta do Cerrado, conhecida popularmente por rosmaninho ou chá de pedestre, que apresentou um excelente resultado quanto ao sabor. A espécie é endêmica na Serra do Espinhaço e foi descrita pelo seu potencial aromático por Saint-Hilaire e von Martius em suas viagens por essa região, no século XIX. Neste sentido, tenho pesquisado por outras espécies para a aromatização de azeites, como as plantas alimentícias não convencionais, no sentido de valorar sabores regionais.
