Abstract

El mezcal que se produce en el sur de Zacatecas no es mezcal, sino tequila. Se produce con tecnologías industriales y se vende como si fuera mezcal debido a las denominaciones de origen, las cuales se determinan con criterios estrictamente mercantiles y muy alejados de la intención de proteger el patrimonio biológico y cultural.
