Abstract

La producción de trigo harinero (Triticum aestivum L.) en México se estima en 3.4 millones de toneladas, cantidad que es insuficiente para abastecer las necesidades de consumo que son de 6.3 millones de tonelada (SIAP, 2009). En respuesta a esta necesidad, la industria regional ha reaccionado habilitando a grupos de agricultores para asegurar reservas mínimas estratégicas para disminuir el riesgo que representa la dependencia de compra a precios fluctuantes en el mercado internacional (Melis-Cota, 2008). En México, la distribución de siembras de trigo por calidad no concuerda con las necesidades de la industria nacional que genera productos tipo A derivados de la molienda de trigos de los Grupos 1, 2 y 3, o de su mezcla, con tres grados de calidad: común o estándar, fina y extrafina; grados que constituyen la base para la elaboración de pan, tortillas, galletas, pasteles y cereales de desayuno. El Grupo 2 proporciona un tipo de gluten medio-fuerte, especial para la panificación manual y semi-mecanizada; además, es un excelente corrector de trigos de gluten débil o gluten muy fuerte.
