CALIDAD INDUSTRIAL DE TRIGOS HARINEROS MEXICANOS PARA TEMPORAL. II. VARIABILIDAD GENÉTICA Y CRITERIOS DE SELECCIÓN

Abstract

La variabilidad genética, heredabilidad y correlaciones entre variables de calidad, se determinaron para establecer criterios de selección útiles en el mejoramiento genético de la calidad industrial de trigos harineros (Triticum aestivum L.) mexicanos para temporal o secano, en 15 genotipos que representan amplia diversidad en calidad de panificación. La evaluación se hizo en 11 localidades que representan la variabilidad ambiental bajo la cual se cultiva el trigo de temporal. Se detectó baja variabilidad genética para peso hectolítrico, proteína en grano y en harina, volumen de pan, textura de grano, rendimiento de grano y fuerza general de gluten (volumen de sedimentación). Extensibilidad de gluten (alveogramas-P/G y P/L) y actividad enzimática (asociada con germinación en espiga), mostraron niveles de variabilidad genética intermedios. La variabilidad genética más alta se registró en fuerza de gluten (alveograma-W) y tiempo de amasado. Las variables alveograma-W, tiempo de amasado, volumen de sedimentación y textura de grano presentaron los valores más altos de heredabilidad. Las variables alveograma-W, tiempo de amasado, volumen de sedimentación, proteína en grano y en harina y alveogramas-P/G y P/L presentaron asociación positiva y significativa con volumen de pan, que aunado a sus valores de variabilidad genética y heredabilidad, las hacen variables adecuadas para la selección indirecta en el mejoramiento de la calidad panadera del trigo.
