Abstract

Partindo dos conceitos de turismo gastronómico, paisagens alimentares e branding de destinos, o propósito deste trabalho é responder à questão “De que forma é que o turismo gastronómico contribui para a preservação/recuperação/valorização da autenticidade, paisagens alimentares e para a promoção e definição da marca dos destinos turísticos?” Através de uma revisão da literatura, desenvolve-se uma reflexão teórica que posiciona a autenticidade como conceito nevrálgico. Considerando a tendência crescente da “expansão do horizonte gastronómico”, esta abordagem é relevante porque identifica novas questões de governança, preservação dos territórios, existência de redes alimentares, éticas e sustentáveis e o papel estratégico da gastronomia na marca dos destinos. O artigo explicita e estabelece novas conexões temáticas, apontando caminhos futuros, a partir de abordagens mais integradas, que permitam reconhecer e valorizar a autenticidade dos destinos de turismo gastronómico e identificar vantagens competitivas.
