APLIKASI TEPUNG UBI JALAR UNGU DALAM PENGOLAHAN MIE INSTAN FUNGSIONAL

Abstract

Ubi jalar ungu merupakan komoditi pertanian Kabupaten Sigi Provinsi Sulawesi Tengah yang memiliki kadar antosianin cukup tinggi, namun biasanya diolah secara tradisional seperti dibakar dan direbus sehingga memiliki nilai ekonomi relatif rendah. Teknologi pengolahan hasil ubi jalar ungu sebagai salah satu bahan dasar dalam pembuatan mie instan fungsional dilakukan dengan cara subtitusi tepung terigu dengan tepung ubi jalar ungu. Penelitian dilakukan dengan tahapan sebagai berikut: (1) observasi daerah sentra produksi ubi jalar ungu; (2) pembuatan tepung ubi jalar ungu disertai dengan analisis kadar antosianinnya; dan (3) pembuatan mie instan fungsional mensubtitusi tepung terigu dengan tepung ubi jalar ungu yang diproduksi (sesuai point 1) serta dilakukan analisis kadar antosianin, tingkat kesukaan warna, rasa, aroma dan penerimaan secara keseluruhan terhadap mie instan fungsional yang diproduksi. Pengolahan ubi jalar ungu menjadi tepung ubi jalar ungu memiliki rendemen sebesar 35,51% dengan kadar antosianin sebesar 99,91 mg/L dengan total antosianin 0,232% atau equivalen dengan kadar antosianin 232 mg/100 g tepung ubi jalar ungu. Mie instan fungsional dari 500 g tepung ubi jalar ungu + 500 g tepung terigu memiliki skor penilaian warna, aroma, rasa dan penerimaan keseluruhan (overall) dengan skala hedonik “suka”. Mie instan fungsional terbaik adalah mie instan fungsional dari 500 g tepung ubi jalar ungu + 500 g tepung terigu dengan kadar antosianin 44,977 mg/L, total antosianin 0,025% dan kadar antosianin 25,25 mg/100g serta memiliki skor penilaian warna, aroma, rasa dan penerimaan keseluruhan (overall) dengan skala hedonik “suka”. Kata Kunci: ubi jalar ungu, home industri, subtitusi dan mie instan fungsional
