ANALISIS KANDUNGAN ANTOSIANIN PADA BROWNIES UBI JALAR UNGU

Abstract

Ubi jalar ungu (Ipomea batatas L.poir) adalah jenis tanaman budidaya dan bagian yang dimanfaatkan adalah akarnya yang membentuk umbi dengan kadar antosianin yang tinggi. Warna ungu pada ubi jalar disebabkan oleh adanya zat warna alami yang disebut antosianin. Tujuan penelitian untuk mengetahui pengaruh penambahan ubi jalar ungu terhadap mutu brownies dan untuk mengetahui tingkat penerimaan panelis terhadap brownies ubi jalar ungu. Penelitian terdiri dari 4 perlakuan dan 3 ulangan. Perlakuan yang dimaksud adalah ubi jalar ungu yaitu 0g, 100 g, 200 g dan 300 g. Parameter yang diamati adalah kadar air, kadar antosianin, kadar abu dan uji organoleptik terhadap aroma, warna, rasa dan tekstur brownies. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL), apabila ada beda nyata dipakai uji lanjut BNJ pada taraf 5 %. Hasil penelitian ini menunjukan bahwa kadar air dan kadar antosianin semakin meningkat dengan bertambahnya ubi jalar ungu pada pembuatan brownies. Uji kesukaan terhadap aroma, warna, rasa dan tekstur brownies lebih disukai pada perlakuan penambahan ubi jalar ungu 100 g. Kata kunci : Antosianin, Brownies, Ubi Jalar Ungu
