Abstract

La contribución de los moluscos bivalvos a la producción acuícola mundial ha mostrado un incremento constante, la cual ha sido de gran importancia e impacto como fuente de alimentos con alto valor nutricional, divisas y empleo, generando así un interés significativo durante las últimas décadas, incluyendo investigaciones realizadas sobre aspectos relacionados con su anatomía funcional, ontología, fisiología y los mecanismos utilizados para su alimentación. Existen múltiples publicaciones e investigaciones en este tema, algunas de las cuales se mencionan en esta revisión. El presente trabajo inicia presentando generalidades sobre la anatomía de las ostras y enfatiza posteriormente aspectos relacionados con sus estrategias de captura, selección e ingestión de partículas en suspensión, enfocándose en las ostras del género Crassostrea, pero con estructuras y mecanismos relacionados a otras especies de bivalvos también, con los cuales mantiene fuertes similaridades. Se presenta información detallada sobre la estructura ctenidial y su desarrollo, así como sobre los principales factores químicos, físicos, ambientales y fisiológicos involucrados en el tratamiento de las partículas alimentarias capturadas, y finalmente los mecanismos propuestos para la producción de pseudo-heces.
