Aceitabilidade de preparações com cacau na alimentação escolar

Abstract

Introdução: A alimentação escolar deve prezar pela oferta de alimentos saudáveis, sendo importante o fornecimento de alimentos funcionais que propiciam benefí­cios í saúde nutricional. Objetivos: Analisar o grau de aceitação de preparações a base de cacau. Métodos: O estudo foi realizado com 81 escolares matriculados em uma escola municipal de Pinheirinho do Vale/RS. Foi aplicado o teste de Escala Hedônica facial para análise da aceitabilidade de duas preparações a base de cacau (bolo de cenoura com cacau e vitamina de banana com cacau), considerando uma amostra aprovada quando o í­ndice de aceitabilidade é ≥ 85%. Resultados: Foi possí­vel obter o í­ndice de aceitabilidade de 91,3% para a Vitamina de Banana com cacau e, 87,3% para o Bolo de Cenoura com cacau. Verificou-se que não houve diferença significativa entre os í­ndices de aceitabilidade das amostras com p = 0,868, considerando um intervalo de confiança de 95%. Conclusão: As preparações funcionais utilizando cacau em pó analisadas tiveram altos í­ndices de aceitabilidade entre os escolares participantes da pesquisa, Avalia-se importante ampliar a variedade de alimentos e sabores na alimentação escolar e incentivar o consumo de alimentos funcionais.Palavras-chave: alimentos funcionais, í­ndice de aceitabilidade, escolares.
