Sığır Eti ve İç Organlarında Zeranol Kalıntısının Araştırılması

Abstract

Bu çalışmada Kayseri’deki mezbahanelerde kesilen sığırlara ait et, karaciğer ve böbrek örneklerinde, zeranol kalıntı seviyelerinin Enzyme-Linked İmmune Sorbent Assay (ELISA) yöntemi ile araştırılması amaçlandı. Bu amaçla, Kayseri ilindeki sığır kesimi yapılan birinci sınıf üç farklı mezbaha Ekim-Aralık 2018 tarihlerinde, 1 ay periyodik aralıklarla, üçer kere ziyaret edildi. Her ziyarette her bir mezbahadan rastgele seçilen hayvanlara ait 20 karaciğer, 20 böbrek ve 20 et örneği alınarak toplamda 180 örnek materyal olarak kullanıldı. Bu çalışmada, analiz edilen sığır doku örneklerinden 23 böbrek (%38.3), 20 karaciğer (%33.3) ve 17 (%28.3) et örneğinde zeranol kalıntısı tespit edildi. Sığır böbrek, karaciğer ve et örneklerinde kalıntı miktarı sırasıyla; 50.23 – 1120.61 ppt, 38.94-1057.96 ppt ve 32.29-1195.8 ppt arasında tespit edildi. Analiz edilen örneklerdeki zeranol kalıntısı Kodeks Alimentarius’ta belirtilen yasal limitin altında idi. Sonuç olarak, analiz edilen örneklerdeki zeranol kalıntı miktarları düşük bulunmuş olsa da zeranol içeren et tüketiminin halk sağlığı açısından risk oluşturabileceği nedeniyle, gıda güvenliği kapsamında bu kimyasalın periyodik olarak izlenmesi gerektiği ortaya kondu
