Peranan Kalium Hidroksida (KOH) Terhadap Mutu Karaginan Eucheuma cottonii di Indonesia

Abstract

Karaginan merupakan getah rumput laut yang diekstrak dengan air atau larutan alkali seperti kalium hidroksida (KOH). Konsentasi KOH berpengaruh terhadap mutu karaginan. Semakin meningkat konsentrasi KOH mampu meningkatkan jumlah rendemen, mampu menurunkan kadar air dan kadar sulfat pada karaginan. Selain viskositas dan kekuatan gel yang dipengaruhi oleh KOH, juga dipengaruhi oleh lama waktu ekstraksi. Semakin lama waktu ekstraksi dengan meningkatnya konsentrasi KOH mampu meningkatkan kekuatan gel, namun viskositas mengalami penurunan. Sebaliknya, semakin cepat lama waktu ekstraksi dengan bertambahnya konsentrasi KOH maka viskositas meningkat dan kekuatan gel menurun pada karaginan
