PENGOLAHAN IKAN TUNA ASAP CAIR

Abstract

Ikan merupakan bahan pangan yang mudah mengalami pembusukan, sehingga memerlukan penanganan yang khusus untuk mempertahankan mutunya. Proses kerusakan ikan berlangsung lebih cepat di daerah tropis karena suhu dan kelembaban harian yang tinggi. Pengolahan ikan dengan cara pengasapan sangat terkenal di maluku, produk yang paling terkenal adalah Ikan Asar, namun kelemahan dari cara pengasapannya masih menggunakan cara yang tradisyonal yaitu menggunakan kayu bakar atau sabut kelapa sebagai sumber asap. Upaya untuk mengatasi kelemahan pada pengasapan tradisional adalah pengasapan modern menggunakan asap cair (Utomo et al, 2009). Asap dapat berperan sebagai bahan pengawet apabila komponen-komponen asap meresap kedalam bahan yang di asap. Zaitsev et al (1969) menyatakan bahwa zat-zat yang ada dalam asap merupakan bahan yang dapat menghambat pertumbuhan bakteri (Bacteriostatic). bahkan, dapat membunuh bakteri (Bacteriside). Tujuan untuk memberikan pengetahuan bagi masyarakat terkait cara mengolah ikan asap cair agar pengolahan pangan berbahan dasar ikan yang diarahkan pada cara yang mudah cepat dan hygenis dalam penyiapannya, mudah didistribusikan dengan tetap menjaga kualitas kandungan nilai gizinya.
