Abstract

El zapallo (Cucurbita moschata, D.), fruto ampliamente cultivado en la región del nordeste argentino, es rico en nutrientes y sustancias bioactivas y su oferta como vegetal fresco cortado representa una alternativa para la economía regional. Se estudiaron los cambios en la calidad sensorial y microbiológica de zapallo anco (Cucurbita moschata, D.) cortado en cubos almacenado a 50 C, expuestos a luz UV-C (0, 2.08 y 3.14kJ.m-2) y se analizó la evolución de la acidez titulable, contenido de carotenoides y azúcares totales del producto. Los tratamientos con radiación UV-C fueron efectivos en el control de la carga microbiológica y en la retención de las características sensoriales del producto prolongando su vida útil. La acidez, contenido de carotenoides totales y azúcares en los productos control y tratados con luz UV-C siguieron tendencias similares durante el almacenamiento.
