Pendugaan Umur Simpan Sale Lilit Menggunakan Metode Accelerated Shelf-Life Testing (ASLT) Model Arrhenius

Abstract

Indonesia merupakan salah satu negara dengan yang memiliki potensi besar khususnya dalam sektor pertanian. Salah satu komoditi pertanian yang paling banyak dimanfaatkan adalah jenis buah-buahan seperti buah pisang. Sale lilit merupakan salah satu olahan makanan dengan bahan utama berupa buah pisang matang yang sudah dikeringkan kemudian diolah dan dikemas dengan baik. Penelitian ini bertujuan untuk menelaah perkiraan umur simpan sale lilit. Metode pendugaan umur simpan yang digunakan adalah metode Accelerated Shelf-Life Testing (ASLT) model Arrhenius. Sale lilit disimpan pada tiga suhu penyimpanan yang berbeda sesuai perlakuan (30°C, 40°C dan 50°C). Parameter yang diamati meliputi kadar air, kadar FFA, tekstur (kekerasan dan kerenyahan), warna, aroma, rasa dan tekstur. Pengamatan parameter dilakukan pada hari ke-0, 5, 10, 15 dan hari ke-20 penyimpanan. Hasil penelitian menunjukkan bahwa sale lilit yang disimpan pada suhu 30°C memiliki umur simpan yang paling lama. Berdasarkan data laju peningkatan kadar FFA, perkiraan umur simpan sale lilit yaitu 56,119 hari. Penelitian ini mengimplikasikan bahwa suhu penyimpanan berperan penting dalam memperpanjang umur simpan sale lilit, sehingga produsen dapat mengoptimalkan kondisi penyimpanan, pengemasan, dan distribusi produk.
