Abstract

Jahe mengandung komponen minyak mudah menguap (volatile oil), minyak yang tidak menguap (non volatile oil) dan resin. Minyak menguap/minyak atsiri merupakan komponen pemberi bau yang khas sedangkan minyak yang tidak menguap/oleoresin merupakan komponen pemberi rasa pedas dan pahit. Oleoresin banyak digunakan sebagai rempah, industry, obat tradisional, industri farmasi, industri parfum, industri kosmetik, industri makanan, dan minuman. Sehingga kebutuhan oleoresin jahe yang cukup besar pada berbagai jenis industri, dan nilai ekonomis yang diperoleh semakin besar juga. Perolehan oleoresin dilakukan dengan metode ekstraksi socklet jahe kering dan pemurnian produk dari pelarut dan komponen pengotornya dengan cara distilasi sederhana. Variabel yang divariasikan pada penelitian ini adalah untuk diameter sampel 0,315 mm, 0,815 mm, 1,200 mm, dan 1,700 mm dengan waktu ekstaksi 2; 3; 4; dan 5 jam. Rendemen oleoresin maksimal diperoleh yaitu pada ukuran diameter sampel 0,315 mm dengan waktu ekstraksi 5 jam, indek bias 1,4009, dan densiti 1,0016 gr/cm3 adalah 54,55 %. Hasil ini hampir memenuhi standar yang ditetapkan Depkes. RI. yaitu antara 1,488 – 1,497 untuk indek bias dan 1,026 – 1,045 gr/cm3 untuk densiti.
