PERBANDINGAN VITAMIN C PADA BUAH NAGA BERDAGING PUTIH (Hylocereus undatus) DAN BUAH NAGA BERDAGING MERAH (Hylocereus polyrhizus) DENGAN METODE IODIMETRI

Abstract

ABSTRAKBuah naga adalah buah yang mengandung vitamin C, kalsium, fosfor dan sebaginya. Buah naga mempunyai beberapa warna dan jenis, dari beberapa warna dan jenis tersebut yang banyak dibudidayakan dan dikonsumsi oleh masyarakat adalah Hylocereus undatus (daging putih) dan Hylocereus polyrhizus (daging merah). Kedua jenis buah naga tersebut mempunyai kandungan vitamin C yang berbeda. Tujuan penelitian ini adalah untuk mengetahui perbedaan kadar vitamin C pada buah naga berdaging putih dan buah naga yang berdaging merah. Penelitian yang bersifat yang dilaksanakan adalah penelitian deskriptif. Dengan teknik pengambilan sampel purposive sampling. Metode yang digunakan pada penelitian ini adalah metode iodimetri. Filtrat dari buah naga ditambahkan dengan H2SO4 10% dan indikator amilum dititrasi dengan larutan iodium sampai berwarna biru. Berdasarkan penelitian, didapatkan hasil kadar vitamin C pada buah naga berdaging putih (9,82mg /100 g) lebih kecil dari pada buah naga berdaging merah (14,90 mg /100 g). Pada uji statistik, diperoleh nilai signifikansi (Asymp.Sig.) 0,231 lebih besar daripada nilai signifikan standar (p>0,05) sehingga data dikatakan normal kemudian dilanjutkan dengan uji parametrik T-test. Dari hasil uji T-test diperoleh nilai p=0,00 dimana nilai standar (p<0,05) menunjukkan adanya perbedaan yang signifikan antara kadar vitamin C buah naga berdaging putih dan buah naga berdaging merah. Kata kunci: Vitamin C, Buah Naga, Iodimetri.
