La disminución de la producción artesanal de mezcal en la Región del mezcal de Oaxaca, México

Abstract

En este trabajo se analizó la producción artesanal de mezcal en la “región del mezcal” (RM) del estado de Oaxaca, con el objetivo de conocer los efectos socioeconómicos y productivos relacionados con su industrialización asociado a la demanda de maguey mezcalero Angustifolia Haw por los productores de tequila, que han ocasionado el desplazamiento de la tecnología tradicional de elaboración de mezcal, la disminución y abandono de la actividad productiva. Por medio de los sistemas agroalimentarios localizados (SIAL), se analizó la elaboración artesanal de mezcal en Matatlán, Oaxaca, del periodo 1980 al 2012. El estudio se realizó en 2013. Mediante recorridos de campo y la observación participativa se identificaron 50 productores de mezcal, de los cuales se aplicó una entrevista a profundidad a 12 productores campesinos zapotecas que aún elaboran artesanalmente el mezcal. Los resultados destacan que la elaboración artesanal de mezcal se encuentra en decadencia y desaparición, vive de la fama que alcanzo en su etapa de auge productivo y socioeconómico (de 1940- 1980), situación asociada al impulso de políticas institucionales de fomento y desarrollo productivo que favorecen la industrialización y marginan a los sistemas productivos artesanales campesinos.
