Pengaruh Suhu Pengeringan pada Pembuatan Kelapa Parut Kering (Desiccated Coconut) Terhadap Sifat Kimia dan Organoleptik

Abstract

Telah dilakukan penelitian pengaruh suhu pengeringan terhadap sifat kimia (rendemen, kadar air, kadar lemak) dan sifat organoleptic (warna dan aroma) pada pembuatan kelapa parut yang dikeringkan. Hasil yang diperoleh dilakukan analisa sifat kimia (rendemen, kadar air, kadar lemak) dan organoleptik (warna dan aroma).Rancangan percobaan yang digunakan adalah Rancangan Acak Kelompok dengan satu factor, yaitu suhu pengeringan 50 °C, 60 °C, 70 °C, 80 °C dengan 4 kali ulangan. Data yang diperoleh dihitung menggunakan perhitungan rancangan percobaan (RAK) apabila ada perbedaan nyata antar perlakuan, dilanjutkan dengan uji DMRT pada taraf %% untuk mengetahui perbedaan masing-masing taraf perlakuan. Hasil penelitian menunjukkan bahwa hasil kadar air 2,96%, kadar lemak 48,90%, rendemen 36,62% terbaik pada kondisi suhu pengeringan 80 °C
