Abstract

Dissertação (mestrado)—Universidade de Brasília, Centro de Excelência em Turismo, Programa de Pós-Graduação em Turismo, 2017. ; A cerveja brasileira cria novos símbolos no começo do século XXI e é denominada “cerveja artesanal”. Vista como um produto inovador, geralmente é reduzida apenas a um produto de mercado. No turismo, a cerveja vira foco do que é chamado “turismo cervejeiro”, porém os aspectos sociais e culturais da bebida são esquecidos nessa conceituação. Em contraponto à produção industrial da cerveja, os sujeitos não se sentem mais pertencentes à identidade da cerveja industrial, assim formam grupos sociais que resgatam as produções artesanais de cerveja e ressignificam o símbolo da cerveja para outros aspectos culturais e sociais. Tais grupos possuem como principal característica a união de seus membros sob um sentido mais singular do prazer e do lazer. Diante deste cenário, este trabalho analisa o resgate da cultura e tradição, bem como as motivações da produção caseira de cerveja, demonstrando a mudança recente de sua motivação onde criam-se novos grupos sociais onde a cerveja tem seu foco em um turismo mais voltado ao lazer. ; Brazilian beer is passing through a reformulation in the beginning of the 21st century calling it “craft beer”. Saw as an innovation it’s reduced purely as a product. In tourism research, beer is used in what’s called “beer tourism”, however it’s social and cultural aspects are forgotten. Due to the massification of mainstream beer, subjects do not feel like they belong to this identity, therefore they form new social groups that rescue craft beer productions and bring new cultural and social meanings to the beer. This groups have the feature of union in a more singular way of the pleasure and recreation. On this scenery, this this research analyses the motivation of the production of beer called “craft beer”, in which is said to rescue cultures of craft, creating new social groups and changing the motivation from a sell/ business point to a more recreation focused tourism. ...
