Abstract

Phyllodulcin (PD), abgeleitet von Hydrangea macrophylla, einer Blütenpflanze, die in Japan und Korea heimisch ist, übertrifft nicht nur Saccharose an Süße, sondern bietet auch eine kalorienfreie Alternative zu herkömmlichem Zucker, was für Personen atraktiv ist, die ihren Zuckerkonsum reduzieren möchten. Angesichts seines Potenzials wurde die vorliegende Forschung konzipiert, um die Physiologie, Biochemie und Genetik der PD-Anreicherung in H. macrophylla zu untersuchen. Zusammenfassend bietet diese Studie eine umfassende Untersuchung der verschiedenen physiologischen, biochemischen und genetischen Faktoren, die zur Biosynthese des natürlichen Süßungsmitels PD in H. macrophylla beitragen und einigen wichtigen Enzymen und Stoffwechselwegen, die zu seiner Biosynthese in der Pflanze führen. Diese Ergebnisse positionieren PD als vielversprechende Alternative zu künstlichen Süßungsmiteln und ebnen den Weg für gesündere Ernährungsoptionen in der modernen Ära.

Phyllodulcin (PD), derived from Hydrangea macrophylla, a flowering plant native to Japan and Korea, not only surpasses sucrose in sweetness but also provides a calorie-free alternative to traditional sugars, appealing to individuals seeking to reduce their sugar intake. Given its potential, the present research was devised to delve into the physiology, biochemistry, and genetics of PD enrichment in H. macrophylla. This study offers a comprehensive exploration into the various physiological, biochemical, and genetic facets contributing to the biosynthesis of the natural sweetener PD in H. macrophylla and some major enzymes and pathways leading to its biosynthesis within the plant. These findings position PD as a promising alternative to artificial sweeteners, paving the way for healthier dietary options in the modern era.
