
Resumen: En las Ciencias de la Salud existen dos personajes que son los involucrados en la prevención, control y tratamiento en el proceso salud-enfermedad-atención. Entre ellas, la nutriología es una de las áreas que tiene un contacto recurrente con pacientes ambulatorios y, en menor medida, de hospitalizados. El plan de alimentación es una evidencia del intercambio de mensajes que implica la responsabilidad del nutriólogo en plasmar recomendaciones específicas en cuanto a la búsqueda de la seguridad alimentaria individual y en el hogar, con visión a la utilización biológica alimentaria y el diseño dietético óptimo al paciente. Sin embargo, el abandono de las visitas para el control y diseño de un nuevo tratamiento retrasa las metas a corto, mediano y largo plazo estipuladas desde el inicio de la Historia Clínica Nutricional.Palabras clave: Nutriólogo; paciente; bioética; adherencia; tratamiento nutricionalAbstract: In the Health Sciences there are two characters that are those involved in prevention, control and treatment in the health-disease-care process. Among them, nutriology is one of the areas that has a recurrent contact with outpatients and, to a lesser extent, hospitalized patients. The feeding plan is an evidence of the exchange of messages that implies the responsibility of the nutritionist in formulating specific recommendations regarding the search for food safety in the home and individual, with a view to the biological food use and the optimal dietary design for the patient.
