EMBALAGENS DE ALIMENTOS À BASE DE BIOFILMES COMESTÍVEIS: uma revisão de literatura

Abstract

Filmes comestíveis pode ser uma alternativa para estender a vida de prateleira dos alimentos, servindo como barreira à passagem de gases e quando adicionado de certas substâncias são capazes de retardar a contaminação por microrganismos. Objetivo: Fazer uma revisão de literatura sobre os principais tipos de biofilmes utilizados como embalagens de alimentos Materiais e Métodos: A busca de dados foi realizada a partir de consultas em artigos científicos, notas científicas, trabalhos de dissertação e teses indexados nas bases Scopus, Web of Science, Scielo, PubMed e Science Direct. Fixou-se a busca apenas por literatura publicadas nos últimos 14 anos, ou seja, aquelas publicados de 2004 a 2017. Resultados: As proteínas, os polissacarídeos e os lipídeos são os biopolímeros mais utilizados na formação dos filmes comestíveis. Conclusão: Os biofilmes contribuem positivamente para a conservação dos alimentos, melhoram suas qualidades sensoriais e permitem adição de compostos antioxidantes e antimicrobiano ao alimento.Palavras - Chave: “Biofilme”, “Alimentos”, “Embalagem biodegradável”, “Biopolímero”
