Abstract

En el Peru Plukenetia es un genero de plantas tropicales de la familia Euforbiacea, denominadas inchi, sacha inchi, sacha mani, mani del Inca o mani jibaro, las cuales se utilizan como alimento de las tribus de la Amazonia desde tiempos ancestrales. Plukenetia volubilis es la especie mas conocida, mientras que, Plukenetia huayllabambana es una especie descubierta en la provincia de Rodriguez de Mendoza (Amazonas - Peru) por lo que el objetivo de nuestra investigacion fue obtener y cuantificar el perfil de proteinas de las dos especies. Las semillas fueron secadas, molidas y desgrasadas empleando el metodo de Folch (cloroformo: metanol 2:1), para luego realizar el fraccionamiento de las proteinas aplicando el metodo de Osborne: albuminas (Agua bidestilada), globulinas (NaCl 10,5 M), gliadinas (Etanol 70%) y glutelinas (NaOH 0,1 M). El analisis quimico proximal para cada especie se realizo siguiendo las tecnicas propuestas por la AOAC. La cuantificacion de proteinas totales fue por el metodo de Kjeldahl y las proteinas solubles por el metodo de Gornall (Biuret), siendo las fracciones separadas por SDS-PAGE 15%. Los resultados demuestran que el contenido de proteinas totales en P. volubilis es mayor que P. huayllabambana (30,67 % vs. 27,91 %). Sin embargo, en esta ultima el contenido de grasas es mayor (52,11 % vs. 45,49 %). La fraccion proteica mayoritaria para P. volubilis fueron las globulinas y para P. huayllabambana fueron las albuminas.
