Sistem Kendali Suhu dan Kelembaban pada Proses Fermentasi Tempe

Abstract

Pembuatan tempe konvensional membutuhkan waktu fermentasi 30 hingga 48 jam untuk merubah tempe mentah menjadi tempe masak. Lamanya proses fermentasi pembuatan tempe ini mengakibatkan tidak optimalnya hasil dari produksi tempe.Sehingga dibutuhkanlah alat yang dapat mempercepat dan mengoptimalkan proses produksi pembuatan tempe. Alat optimasi fermentasi tempe ini bekerja pada suhu antara 30ºC - 37ºC. Pada kondisi tersebut, waktu fermentasi tempe mentah menjadi tempe matang membutuhkan waktu 18 jam dengan kriteria uji warna normal, bau normal, dan rasa normal.Miniatur ruang optimasi proses pembuatan tempe ini menggunakan sensor DHT11. Alat ini bekerja berdasarkan kontrol mikrokontroler arduino Mega2560. Optimasi besar suhu dan kelembaban dilakukan tiga skema yang digunakan untuk menentukan besar suhu dan fan serta posisi sensor. Jika suhu dalam ruang fermentasi lebih rendah dari nilai setting point maka lampu akan menyala, bila suhu lebih tinggi maka lampu akan mati, agar suhu yang diinginkan dapat tercapai.
