Abstract

Diversifikasi pangan dapat diterapkan menggunakan pangan lokal seperti umbi-umbian seperti Talas beneng. Talas Beneng adalah salah satu pangan lokal dengan kandungan protein yang cukup tinggi. Talas beneng yang diolah menjadi produk setengah jadi berupa tepung dapat dijadikan alternatif substitusi tepung terigu. Salah satu pemanfaatan dari tepung talas beneng ini yaitu dengan membuat produk EuTaBen dengan melakukan substitusi tepung talas beneng pada eomuk untuk menciptakan pangan yang berkelanjutan. Tujuan penelitian ini adalah untuk mengetahui penerimaan sensorik terhadap Eomuk talas beneng, untuk mengetahui kandungan gizi yang paling banyak berkontribusi pada Eomuk Talas Beneng, dan menentukan komposisi bahan yang paling disukai dari Eomuk Talas Beneng. Metode yang digunakan yaitu metode eksperimen dengan membuat 3 formula. Formula 1 (menggunakan ikan tenggiri 300g dan tepung talas beneng 45 g), formula 2 (menggunakan ikan kembung 300g dan tepung talas beneng 45 g), dan formula 3 (menggunakan ikan tenggiri 300g, tepung talas beneng 45 g, tepung tapioka 15g). Instrument yang digunakan berupa kuesioner yang dianalisis dengan uji organoleptik melalui uji hedonik melibatkan 30 Panelis. Hasil uji dianalisis menggunakan uji non-parametrik Kruskall-Wallis dan uji lanjutan Mann-Whitney dengan tingkat kepercayaan 95% (α=0,05). Hasil penelitian menunjukkan bahwa produk Eomuk Talas Beneng yang menggunakan ikan tenggiri 300g dan tepung talas beneng 30g dengan penambahan tepung tapioka 15g dan telur merupakan produk yang paling disukai dan diterima baik oleh panelis.
