Impacto del consumo de alimentos ultraprocesados sobre la salud Cardiometabólica

Abstract

El presente artículo analiza el impacto del consumo de alimentos ultraprocesados sobre la salud cardiometabólica, considerando evidencias procedentes de tesis y artículos científicos relacionados con adolescentes, adultos trabajadores y fenotipos no obesos. Se aborda la problemática desde una perspectiva integradora, en la que la calidad de la dieta, más que el peso corporal aislado, se reconoce como un determinante relevante del riesgo metabólico. Los hallazgos revisados muestran que una ingesta frecuente de bebidas azucaradas, snacks industrializados, cárnicos procesados, productos de alta densidad energética y bajo valor nutricional se asocia con alteraciones en indicadores como circunferencia abdominal, índice de masa corporal, perfil lipídico, glucosa, triglicéridos, presión arterial e inflamación subclínica. Asimismo, se evidencia que el riesgo cardiometabólico puede manifestarse incluso en personas sin obesidad aparente, lo que cuestiona la dependencia exclusiva de indicadores antropométricos tradicionales. La revisión también identifica el papel protector de patrones alimentarios saludables, en especial la dieta mediterránea, junto con la actividad física y estrategias preventivas de salud pública. Se concluye que reducir el consumo de ultraprocesados constituye una acción prioritaria para prevenir enfermedades cardiometabólicas, mejorar la vigilancia nutricional temprana y fortalecer la promoción de hábitos alimentarios sostenibles en distintos grupos poblacionales vulnerables y contextos educativos comunitarios actuales.
