Composición y declaraciones nutricionales en el etiquetado de bebidas vegetales no saborizadas ecuatorianas

Abstract

El consumo de bebidas vegetales en Ecuador ha experimentado un crecimiento sostenido, con una creciente diversificación del mercado local. Este estudio analizó 30 marcas ecuatorianas de bebidas vegetales, clasificadas por materia prima, declaraciones nutricionales (claims) y aditivos. Se evaluaron ingredientes como almendra, soya, avena, coco y lupino, y se identificó una amplia gama de precios (0,99 a 5,09 USD). La mayoría de los productos fueron enriquecidos con calcio, vitamina A y D, y contenían aditivos como estabilizantes y emulsionantes. Los análisis nutricionales mostraron que estas bebidas presentan un menor aporte energético y proteico en comparación con la leche de vaca, aunque algunas bebidas de soya alcanzaron valores proteicos similares. Se identificaron diferencias significativas en el contenido de carbohidratos y azúcares según los claims nutricionales, especialmente en las bebidas "sin azúcar". Sin embargo, se detectaron inconsistencias, como la presencia de colesterol en algunas bebidas vegetales, lo que podría indicar errores de etiquetado o la inclusión de ingredientes de origen animal. Se concluye que las bebidas vegetales ecuatorianas son una alternativa para consumidores con intolerancia a la lactosa o preferencias éticas, pero presentan una composición nutricional muy variable que debe ser considerada por los consumidores y profesionales de la salud.
