Biotekhnologicheskii sposob povysheniia kachestva khleba s zernovymi produktami

Abstract

В настоящее время ферментные препараты широко используют для улучшения хлебопекарных свойств муки и качества хлеба. Хлебобулочные изделия с зерновыми продуктами относятся к диетическим хлебобулочным изделиям. Наличие в рецептуре этих изделий распределённой в мякише пшеничной крупки обусловливает грубый на ощупь мякиш, недостаточно развитую пористость, что ограничивает употребление данных сортов хлеба. Разработан биотехнологический способ повышения качества хлеба с зерновыми продуктами, предусматривающий применение ферментных препаратов с различной активностью. Установлено влияние ферментных препаратов с различной активностью в составе мультэнзимных композиций на органолептические и физико-химические показатели качества и срок сохранения свежести хлеба из пшеничной муки с зерновыми продуктами.
