Efeito de tecnologia de frio para conservação de óleo da amêndoa de bacuri

Abstract

O objetivo deste trabalho foi avaliar o efeito da conservação do óleo da amêndoa de bacuri pelos métodos de congelamento lento e rápido sobre suas características físico-químicas, em diferentes tempos de armazenamento. As amostras de óleos obtidas foram divididas para receber congelamento lento (-18ºC) e rápido (-22ºC). As análises dos índices de iodo, saponificação e refração foram analisadas nos tempos de T0, T1 (55 dias) e T2 (75 dias), enquanto o índice de acidez e peróxido foram realizados em T0, T1 (50 dias), T2 (70 dias) e T3 (80 dias). Houve diferença significativa (p<0,05) no índice de iodo no tempo T1, enquanto o índice de saponificação e acidez nos tempos T1 e T2 teve valores superiores para o óleo de congelamento lento. No índice de peróxido, não houve diferença significativa entre os métodos de congelamento. A tecnologia de frio mostrou-se eficiente para aumentar a vida útil do óleo de bacuri.
