Abstract

Данная работа посвящена разработке технологии получения БАД из малинового жмыха. В ходе исследования решались следующие задачи: 1. Изучение научной литературы по выбранной теме. 2. Выбор и обоснование объектов и методов исследования. 3. Разработка технологии получения БАД. 4. Определение показателей качества разработанного изделия. На основании проведенного исследования показана целесообразность применения выбранной технологии получения β-глюкана из жмыха малины. Результаты микробиологических и физико-химических исследований изучаемого объекта соответствуют действующим нормативно-техническим документам. Готовый продукт – добавка, содержащая β-глюкан, может быть рекомендована для употребления различными группами населения. При выполнении литературного обзора использовались следующие базы данных (eLIBRARY.RU, Яндекс.Патенты, КонсультантПлюс, NCBI U.S. National Library of Medicine, ResearchGate).

This work is devoted to the development of technology for obtaining dietary supplements from raspberry cake. During the study, the following tasks were solved: 1. The study of scientific literature on the chosen topic. 2. Selection and justification of objects and methods of research. 3. Development of technology for obtaining dietary supplements. 4. Determination of quality indicators of the developed product. Based on the study, the expediency of using the chosen technology for obtaining beta-glucan from raspberry cake was shown. The results of microbiological and physico-chemical studies of the object under study correspond to the current regulatory and technical documents. The finished product, an additive containing beta-glucan, can be recommended for use by various groups of the population. When performing a literature review, the following databases were used (eLIBRARY.RU, Yandex.Patents, ConsultantPlus, NCBI U.S. National Library of Medicine, ResearchGate).
