Abstract

Проведен патентный поиск по теме исследования, изучены и подобраны методики, исследованы клейковина муки и мучных смесей, органолептические показатели муки, мучных смесей и дрожжевого теста, кислотность муки, мучных смесей и дрожжевого теста, влажность муки, мучных смесей и дрожжевого теста. Проведён анализ полученных результатов исследования; представлены данные эксперимента в виде таблиц, проведена математическая обработка полученных данных; представлены мероприятия и правила работы в лаборатории биотехнологии.

A patent search was conducted on the topic of research, methods were studied and selected, gluten of flour and flour mixtures, organoleptic characteristics of flour, flour mixtures and yeast dough, acidity of flour, flour mixtures and yeast dough, moisture of flour, flour mixtures and yeast dough were investigated. An analysis of the results of the study; the experimental data are presented in the form of tables, the mathematical processing of the obtained data is carried out; Presents activities and rules of work in the laboratory of biotechnology.
