Ð¢ÐµÑ Ð½Ð¾Ð»Ð¾Ð³Ð¸Ñ и товароведение продуктов функционального назначения, Ð½Ð°Ð¿Ñ€Ð°Ð²Ð»ÐµÐ½Ð½Ñ‹Ñ Ð¿Ñ€Ð¾Ñ„Ð¸Ð»Ð°ÐºÑ‚Ð¸ÐºÑƒ Ð¹Ð¾Ð´Ð´ÐµÑ„Ð¸Ñ†Ð¸Ñ‚Ð½Ñ‹Ñ Ð·Ð°Ð±Ð¾Ð»ÐµÐ²Ð°Ð½Ð¸Ð¹

Abstract

Ð’ работе была изучена возможность использования растительного сырья с высоким содержанием Ñ„ÑƒÐ½ÐºÑ†Ð¸Ð¾Ð½Ð°Ð»ÑŒÐ½Ñ‹Ñ Ð¸Ð½Ð³Ñ€ÐµÐ´Ð¸ÐµÐ½Ñ‚Ð¾Ð². Были исследованы новые перспективные йодсодержащие растения: молодые листья грецкого Ð¾Ñ€ÐµÑ Ð°, жимолость и Ñ„ÐµÐ¹Ñ Ð¾Ð° в свежем, сушеном и замороженном виде. Проведенные исследования показали, что самое высокое содержание витамина С и йода было в Ð¼Ð¾Ð»Ð¾Ð´Ñ‹Ñ Ð»Ð¸ÑÑ‚ÑŒÑÑ Ð³Ñ€ÐµÑ†ÐºÐ¾Ð³Ð¾ Ð¾Ñ€ÐµÑ Ð°. Кроме того молодые листья грецкого Ð¾Ñ€ÐµÑ Ð° содержат алкалоид – юглон (5 окси-1,4 - Ð½Ð°Ñ„Ñ‚Ð¾Ñ Ð¸Ð½Ð¾Ð½), который является Ñ Ð¾Ñ€Ð¾ÑˆÐ¸Ð¼ консервантом. Была разработана Ñ‚ÐµÑ Ð½Ð¾Ð»Ð¾Ð³Ð¸Ñ производства обогащающего компонента из творожной сыворотки и Ð¼Ð¾Ð»Ð¾Ð´Ñ‹Ñ Ð»Ð¸ÑÑ‚ÑŒÐµÐ² грецкого Ð¾Ñ€ÐµÑ Ð°, а на его основе функционального десерта с добавками восстановленного порошка жимолости и плодово-ягодного пюре.
