Abstract

Объектом исследования являлась сырокопченая колбаса Брауншвейгская. Цель выпускной квалификационной работы - исследование потребительских свойств и экспертиза качества сырокопченых колбас. В разделе по товароведению рассмотрены потребительские свойства, технология производства, упаковка и маркировка, условия и сроки хранения сырокопченых колбас, а также классификация и характеристика их ассортимента.
