Abstract

Дан обзор литературы по предложенной теме, приведены данные по Ñ Ð¸Ð¼Ð¸Ñ‡ÐµÑÐºÐ¾Ð¼Ñƒ составу Ð±ÐµÐ·Ð³Ð»ÑŽÑ‚ÐµÐ½Ð¾Ð²Ñ‹Ñ Ð²Ð¸Ð´Ð¾Ð² муки, рассмотрена роль Ð¾ÑÐ½Ð¾Ð²Ð½Ñ‹Ñ Ð¸Ð½Ð³Ñ€ÐµÐ´Ð¸ÐµÐ½Ñ‚Ð¾Ð² рецептуры, в том числе возможность использования гидроколлоидов. Проведён анализ Ñ‚ÐµÑ Ð½Ð¾Ð»Ð¾Ð³Ð¸Ð¸ приготовления заварного теста. Представлены основные особенности питания при целиакии. Описаны объекты и методы исследования теста и Ð¼ÑƒÑ‡Ð½Ñ‹Ñ Ð·Ð°Ð²Ð°Ñ€Ð½Ñ‹Ñ Ð¸Ð·Ð´ÐµÐ»Ð¸Ð¹ из Ð±ÐµÐ·Ð³Ð»ÑŽÑ‚ÐµÐ½Ð¾Ð²Ñ‹Ñ Ð²Ð¸Ð´Ð¾Ð² муки. Представлены результаты Ð¿Ñ€Ð¾Ð²ÐµÐ´ÐµÐ½Ð½Ñ‹Ñ Ð¸ÑÑÐ»ÐµÐ´Ð¾Ð²Ð°Ð½Ð¸Ð¹. Приведены данные по влажности теста и Ð³Ð¾Ñ‚Ð¾Ð²Ñ‹Ñ Ð¸Ð·Ð´ÐµÐ»Ð¸Ð¹, структурно-Ð¼ÐµÑ Ð°Ð½Ð¸Ñ‡ÐµÑÐºÐ¸Ð¼ и микроскопическим исследованиям заварного теста. Получены результаты по намокаемости Ð³Ð¾Ñ‚Ð¾Ð²Ñ‹Ñ Ð¸Ð·Ð´ÐµÐ»Ð¸Ð¹ и объёму Ð¸Ñ Ð¿Ð¾Ð»Ð¾ÑÑ‚Ð¸, представлены органолептические профили Ð³Ð¾Ñ‚Ð¾Ð²Ñ‹Ñ Ð¿Ð¾Ð»ÑƒÑ„Ð°Ð±Ñ€Ð¸ÐºÐ°Ñ‚Ð¾Ð². Представлены экономические расчеты, которые показали, что стоимость Ð·Ð°Ð²Ð°Ñ€Ð½Ñ‹Ñ Ð¸Ð·Ð´ÐµÐ»Ð¸Ð¹ не будет превышать стоимость Ð°Ð½Ð°Ð»Ð¾Ð³Ð¸Ñ‡Ð½Ñ‹Ñ Ð¸Ð·Ð´ÐµÐ»Ð¸Ð¹ на пшеничной муке.
