Abstract

В работе исследованы образцы зеленой гречихи. Изучен процесс получения гречишного солода. Определена амилолитическая активность солодов, полученных при различных температурах проращивания гречихи. Приведен график затирания сырья при использовании ячменного и гречишного солодов. Определены физико-химические и органолептические показатели готового напитка Разработана технология и рецептура медового напитка на основе гречишного солода.
