Abstract

Целью данной научно-исследовательской работы является разработка Ñ‚ÐµÑ Ð½Ð¾Ð»Ð¾Ð³Ð¸Ð¸ приготовления киселей на основе Ð¿Ð¾Ð»Ð¸ÑÐ°Ñ Ð°Ñ€Ð¸Ð´Ð¾Ð² овса, которые широко использовались в этнической ÐºÑƒÑ Ð½Ðµ. Ð’ первой главе описываются Ñ Ð°Ñ€Ð°ÐºÑ‚ÐµÑ€Ð¸ÑÑ‚Ð¸ÐºÐ¸ и свойства киселей, а также сырья применяемого при его изготовлении - овса. Изучено влияние Ð¿Ð¾Ð»ÐµÐ·Ð½Ñ‹Ñ ÑÐ²Ð¾Ð¹ÑÑ‚Ð² овса, а также продуктов, Ð¿Ñ€Ð¸Ð³Ð¾Ñ‚Ð¾Ð²Ð»ÐµÐ½Ð½Ñ‹Ñ Ð½Ð° его основе, на человеческий организм. Приведено описание ÑÑ‚Ð°Ñ€Ð¸Ð½Ð½Ñ‹Ñ Ñ€ÐµÑ†ÐµÐ¿Ñ‚ÑƒÑ€ и способов употребления киселей на Руси. Во второй главе отражены проведенные эксперименты по определению консистенции, вязкости и общей кислотности полуфабрикатов Ð¾Ð²ÑÑÐ½Ñ‹Ñ ÐºÐ¸ÑÐµÐ»ÐµÐ¹. Проведена органолептическая оценка качества Ð³Ð¾Ñ‚Ð¾Ð²Ñ‹Ñ Ð½Ð°Ð¿Ð¸Ñ‚ÐºÐ¾Ð². А также приведены результаты Ð¼Ð¸ÐºÑ€Ð¾Ð±Ð¸Ð¾Ð»Ð¾Ð³Ð¸Ñ‡ÐµÑÐºÐ¸Ñ Ð¸ÑÑÐ»ÐµÐ´Ð¾Ð²Ð°Ð½Ð¸Ð¹ зерна овса и полуфабрикатов киселей. Ð’ третьей главе уточнены Ñ‚ÐµÑ Ð½Ð¾Ð»Ð¾Ð³Ð¸Ð¸ приготовления киселей на основе Ð¿Ð¾Ð»Ð¸ÑÐ°Ñ Ð°Ñ€Ð¸Ð´Ð¾Ð² овса, которые широко использовались в этнической ÐºÑƒÑ Ð½Ðµ и разработаны Ñ‚ÐµÑ Ð½Ð¾Ð»Ð¾Ð³Ð¸Ñ‡ÐµÑÐºÐ¸Ðµ ÑÑ ÐµÐ¼Ñ‹.
