Abstract

Выполнено маркетинговое обоснование необходимости проектирования ресторана с кухней народов республики Коми в г. Сыктывкаре, произведены технологические расчеты оборудования, определена организационная структура предприятия. Рассмотрена организация банкета по случаю Дня рождения на 25 человек с полным обслуживанием официантами. Разработаны мероприятия по обеспечению безопасности деятельности ресторана, его планировочное решение и определены основные экономические показатели.
