Пищевые и биологически активные добавки

Abstract

В пособие включены сведения о классификации, технологических свойствах, критериях безопасности пищевых добавок и вспомогательных материалов, а также об основных нормативных документах, регламентирующих применение пищевых добавок. Рассмотрены механизмы действия пищевых добавок при их использовании для защиты пищевых продуктов от микробной и окислительной порчи, улучшения текстуры и органолептических характеристик продуктов питания, производства новых видов продукции диетического и лечебно-профилактического назначения. Даны рекомендации по использованию пищевых добавок в производстве кулинарной продукции и родственных пищевых технологиях. Приведена классификация биологически активных добавок (БАД) и кратко освещена их роль при организации функционального питания и вспомогательной терапии острых и хронических заболеваний.
